Zucchini Nut Bread

Jan's Recipe for Zucchini Nut Bread

  • 3 eggs
  • 2 cups sugar
  • 2 cups raw grated zucchini, drained
  • 1 cup cooking oil
  • 1 t. vanilla extract
  • 3 cups self rising flour
  • 3 t. cinnamon
  • Half cup of chopped walnuts
  1. Beat eggs until foamy. Add oil, sugar and vanilla. Mix well.
  2. Stir in grated zucchini
  3. Add flour & cinnamon to it and stir well
  4. Fold in nuts
  5. Pour into 2 greased loaf pans and bake at 325 for an hour
