Jan's Recipe for Zucchini Nut Bread
- 3 eggs
- 2 cups sugar
- 2 cups raw grated zucchini, drained
- 1 cup cooking oil
- 1 t. vanilla extract
- 3 cups self rising flour
- 3 t. cinnamon
- Half cup of chopped walnuts
- Beat eggs until foamy. Add oil, sugar and vanilla. Mix well.
- Stir in grated zucchini
- Add flour & cinnamon to it and stir well
- Fold in nuts
- Pour into 2 greased loaf pans and bake at 325 for an hour
